Hrutka - Easter "Cheese"

  • 1 dozen large eggs
  • 1 quart milk, slightly heated 
  • 1 t salt

    Beat eggs with a mixer. Add milk. Bake in 9 x 13 pan with sides 35 - 45 minutes at 325 degrees. (Check eggs frequently after about 30 minutes. Stir to prevent sticking). Pour into a cheesecloth bag. (This bag is something you sew together by placing 2 pieces of cheesecloth together, (or, 2 thin washcloths sewn together), about the size of a large dinner plate, which you sew together in a circle, leaving about 4 to 5 inches open on one end). After pouring into the bag, use a rubber band and close the opening very tight. Lay the bag on a cookie sheet. Put another cookie sheet on top of the bag. Place a large brick or two on top of a cookie sheet. This weight will be heavy enough to compress the cheese and squeeze out the liquid. Let it sit like this for about 2 hours. Slowly peel away the bag. This should now look like a yellow circle about the size of a medium dinner plate. Cover and refrigerate overnight and serve with Easter lunch/dinner. Goes well with kielbasa and beets and horseradish.

    *Optional idea to sweeten with honey and vanilla extract
    *also may be heated w/ constant stirring on stovetop w/ very low heat
