Salmon Patties

  • 1 can "Demmings" Salmon
  • 2 eggs
  • 1 sleeve saltine crackers (or substitute bread crumbs)
  • 2 tablespoons dried onions
  • 1 stalk green onion
  • � cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce


    Combine eggs, Worcestershire sauce, lemon juice & brown sugar in a large mixing bowl

    Drain salmon, add to mixing bowl along with chopped green onions, mix thoroughly. Allow this to set while preparing crumbs.

    Add saltines to a separate mixing bowl. Crush saltines to a fine consistency. (tip: use bottom of pint glass as a pestle to crush crackers). Add dried onions, pepper and any other herbs/spices to taste.

    Optional: substitute half the crackers with an equal amount of whole wheat flour

    Add crumbs to salmon mixture a little at a time until mixture is no longer moist but will still form a patty. Form into patties and pan fry over medium heat until golden brown.
