Stanley's Market Kapusta (Sweet & Sour Cabbage)

  • 1 large head cabbage, shredded
  • 1 quart water
  • 1 tbspn salt
  • 3/4 c vinegar
  • 1 c sugar
  • 2 tblspn lard

Bring water with salt to a boil and blanch cabbage in it. Make a sauce of vinegar, sugar, and lard. Bring to a boil. Drain half the water from cabbage. Stir in sauce. Heat 10 min to blend flavors. Best if made in advance. It can be frozen.

For extra flavor and color try these substitutions:

red cabbage
cider or red wine vinegar
bacon fat for lard
add onions
